Eichler owners, who did you trust with your kitchen and bath?

We inherited a 1950s Eichler in Palo Alto from my wife's parents and while the bones are great, the kitchen and both bathrooms are basically original and falling apart. We're currently based in Sharjah for my job and won't be back in California for at least a year, so we're trying to line up contractors from here. The problem is Eichlers are weird, low ceilings, radiant heat in the slab, no attic, and I've read enough horror stories about regular contractors messing them up. How did you handle the radiant heat when you redid the bathroom floor? Did anyone have to redo electrical because of the aluminum wiring? And how did you manage decisions from overseas, did you have a local friend check in or did you just rely on photos? I'm nervous about someone cutting into the slab without understanding what's down there. Any advice would be huge.
